About the Author

Smalley, Nanette: - Chef Nanette Smalley's family had the good fortune of living with an organic garden in the backyard and enjoying the availability of flavorful produce from local farmers, and fresh fish were abundant at the local pier in her hometown on the California coast. Her earliest culinary experiments found her substituting a cornucopia of healthy foods into classical French recipes, which led to developing her own California Classical French cuisine. This led to her opening the restaurant, 'La Querencia'. The National Association of Female Executives, The Roundtable for Women in the Food Business, and The James Beard Association were all in support of her cooking efforts.

"It was a pleasure to recommend Nanette Smalley for attending the school of American Chefs. Nanette was one of my students at the Culinary Institute of America, Hyde Park, N.Y. During that period of a three week course, her professional cooking, behavior, work habits, love for food, ability to work with less knowledgeable persons was excellent. - Henri Patty C.E.C., C.C.E.
