Jim Lopolito is a long-term professional in the hospitality industry with experience since 1973 in private clubs, restaurants, catering, hotels, and theater and stage management. With leadership positions as a general manager, facility operations manager, and chef, Lopolito is an operations and logistical architect. He recognizes and locates what others miss to uncover burdening aspects of a business, and he readily develops solutions that progress a business. Lopolito reports on-site and quickly begins ascertaining a direction of improvement. If you want to learn and understand more about your company and locate hidden profits, Lopolito will show you the way. Jim has held numerous leadership positions in guiding operations, accounting procedures, property management, and achieved his Certified Club Manager "CCM" (CMAA) and Certified Executive Chef "CEC" (ACF) credentials during his tenure. Expense Loss builds like a good book. You get an understanding of Jim's 50 years in the industry. From "Why this Began" to Chapter 15 "Learnings from an actual EL Review." You understand some of the pitfalls we all fall into and also helps us focus on observations from the customer side as well as from Jim's side and his professional eye.

I presented the book to our management team as a mandatory read, no matter how experienced a restaurateur you are "Focusing on Expense Loss" is must read!

I literally ate this book. Bought it yesterday, finished today. There is a lot to unpack here but a near perfect guide to helping owners and operators understand their constraints and how to discover and correct them. It was very reminiscent of The Goal by Eliyahu Goldratt that introduced the theory of constraints in production nearly 30 years ago.
Chapter 13 and 14 were a great one. They highlighted some of the attributes of a good Food Service Company/Sales Representative.
