About the Author

Dimitri Lera is Lecturer in Tourism, Hospitality and Events, the Edge Hotel School, University of Essex, UK. He has over thirty years professional experience in hospitality including as a restaurant manager and hotel manager throughout Europe.

Michel Mason is the Sustainability Engagement Manager and Lecturer at the University of Essex, UK. She holds co-responsibility for the implementation of the university's sustainability sub-strategy and trains Hospitality and Events students at the Edge Hotel School on identifying sustainability challenges in line with sustainable development goals.
