@Mededitor Absolutely! Though for finishing, rather than cooking, BTW, Jeffrey Steingarten’s essay on salt in “The Man Who Ate Everything” is great, and finally explains why different salts — even 100% NaCl — have different culinary properties. I’d long wondered.
