Harold McGeeThe is probably my most banal food opinion, but Harold McGee’s On Food and Cooking is bizarrely good. The fact that he wrote it in 1984 is staggering to me. I grew up with cookbooks from that time! They sure weren’t like this! Just a masterwork.
