The is probably my most banal food opinion, but Harold McGee’s On Food and Cooking is bizarrely good. The fact that he wrote it in 1984 is staggering to me. I grew up with cookbooks from that time! They sure weren’t like this! Just a masterwork.

@baesrule1 @Laura_k_Duffy The ottolenghi books are pretty good tho. I don’t really use the (vegetarian) moosewood cookbooks anymore, but I have a few of them and I liked them at the time. Fuchsia Dunlop’s every grain of rice is an excellent beginner Chinese cookbook.
